Salmon Goodness








I have GOT to stop buying food like there are still 5 people living at home.  It's down to 3 of us and I still come home with a 3 pound piece of salmon!  Raw salmon pulls apart nicely with a fork- great tip if you want to make fresh salmon cakes instead of crab cakes.

I made this in 2 -2 quart dishes.

In a bowl:
2 eggs
2 Cups milk
prepared mustard-about 1/3 C (I like brown or dijon)
Mayo-about 2 Tb
Hot Sauce-your level of heat ( I used about 2 Tb sriracha)
Whisk all that together and add the shredded fresh salmon.

Pour into greased dish and drop globs of your favorite cheese.  I used a soft goat cheese since I wanted the whole dish soft.  Or I would recommend feta, cream cheese, parmigiana, romano...

Bake 325' until no longer jiggly.  If your unsure when it's done, a safe temperature is 160' for custards.  I would remove the dish from oven at 150'+ since the temp will continue to rise out of the oven.  Serve warm, room temp or cold for a snack.
