Grilled Stuffed Hot Peppers

Peppers are still going strong but not for long since the weather is cooling down quickly here in mid September.

Wear gloves to protect your skin.  With sharp knife, make a slit down the length of a hot pepper, remove seeds and membrane, place whatever cheese you like inside, wrap or lay bacon over top.

For vegetarian version I'd probably just use BBQ sauce or chop some green onions, mix with a bit of oil, paprika, teensy bit of sugar and sprinkle on top and let it all bake.

My grill has 3 burners, if you turn the middle burner off and close the lid it acts more like an oven.  Or just bake these in a regular oven.  Then you don't have to turn them and the cheese won't melt out.

Some of them had BBQ sauce on at the last minute and we really liked those the best.   The cutting and seeding went much easier with the larger banana and Cuban peppers.  If I had only jalapenos I'd probably just cut them in half since they are much smaller and thicker.
